Instructions

  1. Line the bottom and sides of a loaf pan with parchment paper.

  2. Preheat the oven to 350°F (175°C).

  3. Sift together the flour, almond flour, and baking powder. Set aside.

  4. Mix the simple syrup and rum to make the rum syrup. Set aside.

  5. Melt the dark chocolate, milk chocolate, and butter using a double boiler or microwave.

  6. Add the sugar and invert sugar to the melted chocolate mixture and whisk until smooth.

  7. In a separate bowl, lightly beat the eggs.

  8. Add the eggs to the chocolate mixture in three portions, mixing well after each addition.

  9. Add the dry ingredients and whisk gently until fully combined.

  10. Pour the batter into the prepared pan and smooth the top with a rubber spatula.

  11. Reduce oven temperature to 325°F (160°C) and bake for 45–50 minutes.

    • The cake is done when a toothpick inserted into the center comes out clean.

  1. While the cake is still hot, brush the top generously with the rum syrup.

  2. Cool the cake in the pan on a rack for 30 minutes, then wrap tightly and refrigerate overnight.


Chocolate Glaze

  1. Melt the chocolate and coconut oil in a heatproof bowl set over simmering water, stirring until smooth.

  2. Pour the warm glaze over the chilled cake.

  3. Spread evenly using an offset spatula.

  4. Refrigerate for 20–40 minutes, until the glaze is set.
